Delicious Butternut Creamy Pasta!

Here is a procedure to create delicious butternut squash pasta!

A sauce can be made with the pasta which is simple and very easy to make. It is a creamy sauce and does not contain butter and nuts. This sauce has a very different taste and it can be served to people who hate vegetables because it is so different from the rest of the sauces that even the vegetable haters love it. It is also a good recipe to make your children eat vegetable as well.

The serving of the pasta can be done in a beautiful manner which will attract the kids and other people who normally don’t like veggies. Ingredients:

  • A butter squash which should be of a medium size, peeled properly and diced
  • Olive oil approximately 3 to 4 tablespoons
  • Sage and mint leaves about 8 to 10
  • Pasta of your choice (it can be colored pasta for kids, diet pasta for elders or of any shape and size which you like to eat!)
  • One and a half cup of water or vegetable broth if you like
  • Yellow diced onion about one quarter of a cup
  • Two Minced cloves of garlic
  • Ground nutmeg about 1/8 of a teaspoon
  • Cheese about one quarter of a cup (or to make it more cheesy you can add more cheese)
  • Salt and pepper according to your taste

Procedure:

1: Boil water in a large pan. Add some salt to the water and put the butternut squash in it. Cook until it becomes soft. It will take approximately 12 to 15 minutes to boil.

2: In another pan, fry the sage leaves. Use medium heat to heat three tablespoons of olive oil in a small pan until the surface of the oil looks a bit shimmery. Add the leaves to it until it becomes crispy but they should be green and not fried to a brown color. Put the leaves on a tissue paper to drain the oil and sprinkle some salt on it.

3: With a slotted spoon, remove the squash from water and place it in a bowl. And boil the pasta in the water as instructed on its packaging.

4: Blend the cooked butternut in a blender and add water or broth, if you like, to it until it gives a smooth texture. Care should be taken while adding water because too much water can spoil the butternut.

Now heat one tablespoon of the remaining olive oil in a deep dish over heat which should be medium and not high. Add the diced onion to it as well as the minced garlic and sauté it for a while approximately for 3 to 5 minutes. Then add the butternut squash mixture to it. Mix it with the cheese. Sprinkle salt, pepper and nutmeg on it according to your taste. Mix the boiled pasta in it until it is all coated with the mixture. Your delicious butternut squash pasta is ready. Serve the pasta with the remaining sage leave.
