- 2 1/2 cups of diced, boiled potatoes
- 3 guajillo peppers with the seeds removed
- 2 chorizos
- 1 large white onion, diced
- 1 garlic clove
- 8 black peppercorns
- 1/2 teaspoon Mexican oregano
- 1 cup refried beans, warmed
- 2 cups shredded iceberg lettuce
- 2 oz queso fresco, crumbled
- 6 rolls (Portuguese, Kaiser, pan basso, teleres)
- 1/3 cup sour cream
1. In a skillet over medium heat, toast the peppers until fragrant, about 15 seconds on each side. Then add half of the onion and garlic. Cover with water and bring to a boil. Reduce to a simmer.
2. Strain the pepper, onion, and garlic into a separate bowl and reserve the liquid. Combine all of the vegetables, peppercorns, and Mexican oregano in a blender with 1 cup of the reserved liquid and salt to taste.
3. In the same skillet over medium-high heat, add the chorizo and cook through for about 5 minutes. Break it apart. Add the remaining onion and cook until softened.
4. Add the boiled potatoes to the skillet and crush them lightly with the back of a spoon.
5. Oil a separate skillet over medium-high heat. Dip your rolls in the blended sauce and coat them well. Add them to the skillet and fry them on both sides.
